Since avocados don’t become soft on the tree but only after the harvest, it takes a real expert to find the best time to harvest the still firm but physiologically ripe fruit.
The avocados can take advantage of that longer time to fill themselves with all the flavor and good fats an avocado can develop.

And by the way, this is the reason our avocados don’t need to be fumigated to ripen, like conventional ones do - ours are already tree ripe so they just continue to ripen naturally.

Most of our organic avocados come from Spanish small farms, grown not only with love but also with great professional care. Our producers grow them pesticide free, inspired by permaculture and have developed a great technique to avoid quick evaporation with a covered and living soil.
Where big industrial farms kill all weeds with herbicides and thus have dead, dry soil, our farmers remove unwanted weed manually and let it decompose on the soil to keep it moist and vital.
This technique allows them to water the plants once a week instead of daily!
