The coconut at its most developed stage, rarely available outside tropical regions.

Entirely different from a young or mature coconut: the soft, spongy interior is light, airy and delicately sweet, while the flesh is coated with a rich, buttery layer full of character.

Sprouting Power: Germination transforms the coconut’s reserves into energy for the growing seedling, resulting in a unique nutritional profile and natural enzymatic activity.

How To Eat & Store

Step 1 - Open

Use a machete to open the coconut. Otherwise, drop it on the floor or slam it against a hard surface. This coconut contains little to no water.

Step 2 - Enjoy the spongy sprout

Cut pieces of the white spongy sprout with a knife and enjoy them. Its texture is light, airy, and unlike anything else found inside a coconut.

Step 3 - Scoop the buttery coating

Using a spoon, scrape the soft buttery layer that coats the inside of the coconut. You can enjoy it on its own or spread it onto the spongy sprout like butter on bread.

Step 4 - Cut and enjoy the coconut flesh

Using a knife, remove the coconut flesh attached to the shell, piece by piece. Its rich texture and flavor make it the perfect final part of the experience.

Consume on arrival for best flavour.

Can refrigerate for 1–2 days once opened.

Where It Begins

Southeast Asia, where coconuts from untreated palms are allowed to germinate naturally, just as they would in the wild.

How It's Grown

Once mature, the coconuts are left to rest until nature takes over. Gradually, roots and a young shoot begin to develop, transforming the fruit from a coconut into a living plant. When the sprout has reached the right stage, the coconut is ready to be harvested.

How It Reaches You

Sprouted coconut: the coconut after it wakes up

A coconut that is left to germinate undergoes a remarkable transformation. As the future palm begins to grow, the coconut water and flesh are gradually converted into fuel for the young plant. In their place appears something entirely unexpected: a soft, white, spongy mass known as the coconut pearl.

Light, airy, and delicately sweet, the coconut pearl bears little resemblance to ordinary coconut flesh. Its texture is often compared to a sponge cake, a marshmallow, or even dense cotton candy. The flavor is subtle and gently coconutty, with none of the richness of mature coconut.

Across Southeast Asia, sprouted coconuts are considered a seasonal delicacy. Many people grow up enjoying them as a snack, while others seek them out specifically for the coconut pearl hidden inside.

Nothing is added and nothing is done to force the process. These coconuts are simply allowed to do what coconuts naturally do when given enough time: begin their journey into becoming a palm tree.

    More of a rare experience for me than just fruit.

    The texture is very interesting, the taste quite salty and unexpected. It really added to the experience to put on some of the coconut olil scraped from the insade.

    Okay so far

    I really wanted to try the sprouted coconut, but unfortunately I was a bit disappointed with the taste. The consistency was really great for that. It melted in your mouth like cotton candy or snow. I would try them again, but only if I could try a very fresh one on site.

    Germinated coconut actually has a very particular texture that may surprise you, it is firmer and less juicy than one might expect. The germination process completely changes traditional coconut water.
