At Jurassic Fruit, we look for honey that still feels alive: raw, unheated, floral, and full of character. Our collection brings together more than 15 rare honeys from wild blossoms, alongside bee treasures like Royal Jelly and Pollen. The current range is centered on Spain and includes varieties such as Thyme Honey, Forest Honey, Lemon Honey, Albaida Honey exquisite, Eucalyptus Honey, and Orange Honey exquisite.
Why our honey tastes so different
We do not look for flat, anonymous sweetness. We look for honey with depth, texture, and a real floral signature.
Several of the current product pages describe these honeys as unheated and bee-friendly, coming directly from small farms. Some also highlight gently moved, unsupplemented bees, no synthetic chemical treatments, and no heating to delay natural crystallization. That is the kind of honey we love: less manipulated, more expressive, and closer to its natural rhythm.
Real honey does not stay still
One of the beautiful things about raw honey is that it changes.
Because it is not heated to force stability, it can crystallize naturally a few weeks or months after harvest. That is not a defect. It is part of the life of real honey. Store it in a dry, dark place, ideally around 25°C, and let it follow its own pace. The texture may shift, but the quality remains.

Each honey has its own personality.
Thyme Honey brings a more intense, herbal character. Forest Honey feels deeper and wilder. Lemon Honey is bright and lively. Albaida Honey exquisite is described as delicate and lingering. Eucalyptus Honey offers caramel nuances with moderate sweetness, while Orange Honey exquisite leans sweeter and more floral. Yes — our honey is raw, unheated, and chosen for its natural character. We do not look for perfectly uniform honey that has been overly processed just to stay liquid for longer. We look for honey that still feels alive: fragrant, expressive, and true to its floral origin. That is also why the texture can evolve naturally over time. For us, this is part of the beauty of real honey. It is less manipulated, more authentic, and much closer to what honey should be.
Crystallization is completely natural and does not reduce quality at all. In fact, it is one of the signs that your honey has not been heavily treated. Raw, unheated honey often begins to crystallize a few weeks or months after harvesting, depending on the variety and storage conditions. Some honeys stay fluid for longer, while others become creamy or more solid more quickly. This is simply part of honey’s natural life and not something to worry about.
We recommend storing our honey ideally at around 25°C, in a dry and dark place. There is no need to refrigerate it. What matters most is protecting it from excess humidity, direct light, and strong temperature swings. If your honey crystallizes, that is perfectly normal. Just keep it well stored and enjoy it at its own rhythm.
Our current honey selection comes from Spain. We work with small-scale producers who care deeply about quality, natural beekeeping, and respectful handling of the bees. For us, origin is not just a place on a label. It is part of the honey’s personality. Climate, flowers, landscape, and beekeeping practices all shape the final aroma, texture, and depth of flavour in the jar.
