How To Eat & Store

Step 1 - Cut and Press

Halve crossways, press gently from both ends, and the citrus pearls roll out naturally.

Step 2 - Use as Garnish

Scatter the pearls over your dishes. The perfect finishing touch for sweet or savoury dishes, and cocktails

Step 3 - Storage

Refrigerate and use within 2 weeks.
Or freeze whole: pearls remain intact and texture preserved.

Where It Begins

Caviar lime (Microcitrus australasica) originates from the rainforests of Australia, where it grows wild. It has since been successfully introduced to organic Mediterranean growing conditions.

How It's Grown

Grown organically from a small certified organic farm in Spain, without synthetic pesticides or fertilisers, and harvested by hand at full ripeness.

How It Reaches You

Harvested at peak ripeness at the end of the week, transported by road, and delivered to your door within an average of 5–6 days from harvest.

Caviar lime: nature’s citrus caviar

Native to the subtropical rainforests of Australia, caviar lime (Citrus australasica) is a citrus like no other. Its flesh is unlike anything : thousands of tiny, crunchy pearls that burst on the tongue with a sharp, refreshing acidity. A favourite among top chefs, it works just as well in everyday cooking as it does in fine dining.

Cut a finger lime in half, press from both ends, and thousands of tiny, perfectly spherical citrus pearls roll out — just like caviar. Each one bursting with intensely tart, bright lime juice. The pearls burst one by one on the palate, releasing citrus in waves rather than all at once.

Now cultivated in Spain in certified organic conditions, making it more accessible.

Use as a garnish for raw fish, oysters, sushi, and ceviche. Top cocktails and desserts. Scatter over avocado or salads. The visual impact is as valuable as the flavour.
