Where It All Begins

The Amazon rainforest. The zafreros venture deep into the heart of the tropical rainforest. These local harvesters collect the Brazil nut pods that have fallen from the giant trees. With just two or three strikes of a machete, the hard fruit capsules are opened, and their precious segments - the Brazil nuts themselves - are poured into large sacks that are carried through the forest on their backs.

How They're Shelled

After travelling by river to the nearest town, the nuts go through four essential processing steps:
- Two steam treatments at 130°C (about 30 seconds each): These loosen the nuts from their shells, allowing them to be shelled whole.
- Manual shelling: A meticulous task traditionally carried out by women.
- Overnight drying at 55–75°C: Essential for safe, long-lasting preservation.
- Vacuum packing in large bags: To preserve their flavour and nutrients as effectively as possible.
