Comment la conserver ?

On la conserve à température ambiante jusqu'à ce qu'elle soit mûre et prête à être consommée.

Une fois mûre, on peut la placer au réfrigérateur pour prolonger sa fraîcheur. Elle s'y conservera 3 à 5 jours.

 

Quels sont ses bienfaits pour la santé ?

La mangue est un fruit nutritif qui peut contribuer à maintenir le corps en bonne santé, notamment le cœur, les yeux, le système immunitaire et le système digestif.

 

Principaux nutriments de la mangue

La mangue est riche en :

  • vitamine B9 : fournit 35,10 % des AJR, soit 70,20 µg pour 100 g
  • vitamine C : fournit 31,25 % de l'AJR, soit 25 mg pour 100 g

 

La mangue est une source de :

  • vitamine A (famille des caroténoïdes) : fournit 18 % de l'AJR, soit 144 µg pour 100 g. La mangue est le 5e fruit le plus riche en β-carotène (tableau Ciqual 2020)
  • vitamine E : fournit 17,08 % de l'AJR, soit 2,05 mg pour 100 g. La mangue est le fruit le plus riche en vitamine E, juste derrière le cassis (tableau Ciqual 2020) table)

 

Bon à savoir, la mangue contient deux principaux types de phytonutriments aux effets antioxydants :

  • caroténoïdes, présents en grande quantité dans la pulpe, qui lui donnent sa belle couleur jaune orangée
  • polyphénols, présents principalement dans la peau et le cœur

 

La mangue contient plusieurs polyphénols aux actions antioxydantes et anti-inflammatoires, protégeant contre la dégénérescence cellulaire.

Pour profiter au maximum de ses polyphénols, et en particulier de la mangiférine (souvent proposée comme complément alimentaire en raison de ses nombreux bienfaits), il est recommandé de gratter la pulpe en contact avec la peau et le noyau du fruit. On peut utiliser un couteau ou les dents pour gratter la pulpe. Certaines variétés de mangues ont une peau agréable à manger ; ce sont généralement celles qui ont la plus faible teneur en polyphénols.
