Fantastical
Even before the heather honey from Jurassic Fruit, this is the best honey I've ever eaten and I've already eaten lots of expensive honeys (not supermarket honey). I would describe it rosy, perfume-like and tropical, without the typical intrusive sweetness that you otherwise know. This honey has hardened, which is common if it is not filtered. The bees are not fed and only feed on honey and pollen, so the bees are healthier and the honey has more depth of taste than the well-known flat sweetness.
